How I Render Tallow for Terra Mata Tallow

At Terra Mata Tallow, the process begins with a simple principle: I want to know where the tallow in my skincare comes from and how it is made.

I render the tallow myself from organic suet sourced locally here in Queensland, Australia. Rendering it in small batches gives me the opportunity to work carefully with the raw ingredient from start to finish, rather than buying a finished ingredient with an unknown process behind it.

Starting with local Australian suet

The first step is sourcing organic suet from local Australian suppliers in Queensland. Suet is the firm fat found around the kidneys and loin of the animal. I choose it because it is a traditional starting point for making tallow and gives me a solid, clean fat to work with.

Keeping the sourcing local matters to me. It connects Terra Mata Tallow to the place where I live and helps me keep the story of each batch honest and straightforward: local Australian suet, rendered by me in Queensland.

My rendering process

I begin by preparing the suet and removing anything that should not be part of the finished tallow. It is then slowly rendered at a gentle temperature. The aim is to allow the fat to melt gradually without rushing the process.

As the suet renders, the liquid fat separates from the remaining solids. I carefully strain the rendered tallow to remove those solids, then allow it to cool and set. Depending on the batch, I may strain it more than once, so the finished tallow is clean and smooth.

Why I render it myself

Rendering the tallow myself means I can stay close to every stage of the process. I can select the raw ingredient, work in small batches, and pay attention to the colour, texture and aroma of each batch as it develops.

It also keeps Terra Mata Tallow connected to traditional making methods. There is something special about taking a simple, locally sourced ingredient and preparing it carefully by hand.

From rendered tallow to Terra Mata Tallow

Once the tallow has been rendered, strained and cooled, it becomes the base ingredient I use in my Terra Mata Tallow products. I then prepare each product in small batches, with the same focus on traceability and careful handling.
